Fudgy Chocolate Coconut Macaroon Truffles

(these quantities will make 12 – 30 truffles, depending on size of your scoop, it easily multiplies and you can make different flavors by separating one large batch into smaller bowls to flavor)

What you need:

1 ripe banana
2 Tbs coconut oil (refined or unrefined, both are ok)
10 oz dark chocolate (chunks or chopped)
pinch kosher or sea salt
1 1/2 cups shredded unsweetened coconut
(cloves, cinnamon, cardamom, chile, orange or lime zest, almond extract, instant coffee for extra flavor, as you like)
(extra coconut, cocoa powder, powdered sugar, turbinado sugar, spices, sprinkles, etc for decorating/garnish)
largish bowl that fits over
flat cookie sheet or large cutting board or large counter surface
sil-pat or waxed paper or parchment paper
cookie/ice cream scoop (smaller is better than larger here)
